A recipe for Quiche Lorraine cake from my mother, Elspeth Durrans.

Method

  1. Melt knob of margarine in a saucepan, add onion and bacon, cook on medium heat for 10-15 mins.
  2. Beat eggs and milk together
  3. Make pastry and line a flan dish with it
  4. Sprinkle onion & bacon into the flan, then add grated cheese
  5. Pour egg & milk into dish
  6. Bake in a moderate oven 170℃ for about 40 mins
  7. Allow to rest for 15 mins before serving
