Quiche Lorraine
A recipe for Quiche Lorraine cake from my mother, Elspeth Durrans.
Ingredients
- 1 small onion, diced
- 3oz diced bacon
- knob of margarine
- 4oz grated cheddar
- 2 medium eggs
- 1 teacup of milk
For pastry
- 6oz plain flour
- 1½oz marg.
- 1½oz white fat
- pinch of salt
- 3tbsp. water
Method
- Melt knob of margarine in a saucepan, add onion and bacon, cook on medium heat for 10-15 mins.
- Beat eggs and milk together
- Make pastry and line a flan dish with it
- Sprinkle onion & bacon into the flan, then add grated cheese
- Pour egg & milk into dish
- Bake in a moderate oven 170℃ for about 40 mins
- Allow to rest for 15 mins before serving
